Hi friends! How was your weekend?
I ran. In the rain. Again. But! No cramps or weird pains :)
and went apple picking with Davida — have I mentioned how much I love this girl? K just making sure.
You know, the usual.
I even went out with friends. Are you shocked that I have a life outside of making pancakes and going for runs? Yeah I know, it is shocking. I’m even shocked.
Anyways, now let’s talk about almonds.
I love ‘em. (And I know Erin agrees). They are rich in vitamin E, fiber, healthy fats and even protein. I eat them when I’m on-the-go and add them to just about everything: granola, yogurt, muffins, bars; to make pizza crust or bread or pancakes and I can’t forget about almond butter… I could continue…
Okay clearly I like almonds. So after reading about all the latest goodies Blue Diamond Almonds have been making (thank you Healthy Living Summit recap posts) I just had to find out more about these flavored creations.
Who knew there were soooo many possibilities with ALMONDS?! Roasted coffee, mocha, caramel macchiatto, strawberry, blueberry, raspberry, salt n vinegar, jalapeño smokehouse, honey dijon…
Enough to make you go nutty! (had to…)
Well sorry to be a Debbie Downer but my excitement faltered once I read the ingredients online: corn maltodextrin, modified corn starch, artificial colors, sugar, food dye, corn syrup… on almonds?! Really?!
Based on my foodie beliefs, I tend to avoid these ingredients on a regular basis and I certainly don’t consider them a part of a “healthy snack”. Oreos are one thing, but almonds…
I am in no way trying to impose my views on your food choices, merely offering another opinion.
So what’s a girl to do?
Obviously make my own!
And that’s just what I did.
Freshly picked apples and cinnamon cocoa almonds = the perfect snack.
Okay but let’s be real: are the Blue Diamond almonds probably tastier than mine? Yeah probably. The additives probably make the coating stick better too. But of course I’m here to give you an alternative made with simple and real ingredients. The cinnamon and cocoa add a nice change of flavor to my everyday snack.
Cinnnamon Cocoa Almonds
- 1 cup raw almonds
- 1 tbsp cocoa powder
- 2 tsp cinnamon
- 1/8 tsp salt
1. Preheat oven to 325 degrees F.
2. Line a baking sheet with parchment paper and set aside.
3. Combine all ingredients in a sealed, ziploc/plastic bag.
4. Shake it like a salt shaker!
5. Once all the almonds are coated, lay on the baking sheet (there will be excess mixture).
6. Bake for 10 minutes.
And that’s all there is to it! I’m thinking honey flavored is my next project. Any other suggestions?
