Foodie Pen Pals [WIAW 6]

Hi everyone! Happy Wednesday; I’m back for What I Ate Wednesday with Jenn with a bit of a twist today.

This month I participated in “Foodie Penpals” thanks to Lindsay over at the Lean Green Bean.

How it works: you are paired with a “penpal” (a reader/blogger) who you are to send a box filled with fun, foodie things ($15 max). Someone is also paired with you, whom you receive a goodie box from. It was a lot of fun to put together a yummy package and also receive mail… you should definitely sign up!

I received my box from a reader named Stefanie. Today I am sharing how I used the dates, shredded coconut and walnuts Stefanie sent me to celebrate What I Ate Wednesday.


What I Ate Wednesday Yesterday

Breakfast: If you follow me on Instagram (you obviously should) you’d know that this past weekend I made my first successful mug cake… for breakfast! I used the recipe from Kylie’s Instagram page (with a few adjustments) and holy cow, it was incredible. So obviously I made it again yesterday.

A peanut butter stuffed date! Start salivating…

Peanut Butter & Banana Breakfast Mug Cake

Adapted from Kylie at Imma Eat That

Ingredients (Makes one serving)

  • 1/3 cup oat flour
  • 1/4 tsp. cinnamon
  • 1/4 tsp. baking powder
  • pinch of salt
  • 1/4 cup egg whites
  • 1/2 banana, mashed
  • 1/4 tsp. of vanilla
  • 1 date, pitted
  • 1 tbsp. of peanut butter (or any other nut butter), divided


  1. Combine oat flour, cinnamon, baking powder and salt.
  2. In a separate bowl, combing egg whites, mashed banana and vanilla.
  3. Add egg white mixture to oat flour mixture and mix well.
  4. Stuff the date with 1/2 tbsp. of peanut butter
  5. Grease (I used cooking spray) a large mug and pour 1/3 of the batter into it.
  6. Add the date to the mug and cover with the remaining batter.
  7. Microwave for 1 minute and 30 seconds.
  8. Top with remaining peanut butter and sliced banana.

Snack: Okay back to the eats. My snack was not as exciting. Three mini yellow plums and a zucchini muffin [recipe]. And the plums were kinda sour…

Lunch: For lunch, I had a black bean burger [recipe] some steamed carrots, zucchini and three sweet potato protein bites [recipe]. Super easy make-ahead lunch, just re-heated at the office!

Snack: I was incredibly hungry in the afternoon… maybe from my morning workout! So I had an apple, two breakfast cookies [recipe] and a granola bar [recipe]. The granola bar is the only thing pictured… sawwy…

Dinner: I was oddly craving an omelette for dinner… who am I kidding? Me craving breakfast food? Not odd at all. So I whipped up egg whites, spinach and peppers, sliced an avocado, mashed sweet potato with cinnamon and walnuts and enjoyed my breakfast dinner. Random combo but quite delicious! Oh and I also had a peach.



Dessert: After dinner, I had some plain greek yogurt (yes with honey), frozen blueberries a drizzle of almond butter… topped it all off with shredded coconut. Not so pretty but yummy!


And now I’m full.

  1. From breakfast to dinner – and dessert, obviously – everything looks delicious. In fact, I think I’ll have to recreate that yogurt bowl with blueberry season finally (!) having started around here this week, too.
    Coconut all the way – that’s not even a question :). Among coconut flour, coconut butter, coconut milk and else I don’t think I’ve met a coconut goodie I haven’t liked. Unless we were talking in combination with meat or another food I don’t eat/enjoy. The creamy flavour is just perfect. Have you tried adding coconut flour (and honey) to Greek yogurt yet? It’s awesome.

    1. I can’t believe I’ve only just discovered mugcakes… they are so quick to make and I added protein powder this morning. Great post-run.

  2. If I pay for your flight to Kuwait, will you come be my personal chef for a week?? I know everyones commenting on your breakfast, but your lunch.. wow! Everything about it sounds great. Definitely gonna check out those sweet potato protein bites :)

  3. Yum! Great idea to put a date inside the cake – it must have gotten so gooey! I have been loving: smoothies in a bowl (topped with some fruit and nut butter), lots of summer produce, and I made homemade chicken soup the other day! Haha a random one for summer.

  4. Literally everything you ate looks perfect.
    Those are all my favorite foods- well I’ve never tried a mug cake but now I have to! (delish ingredients)
    I love dates, walnuts & coconut! All great toppings for sweet and savory.

  5. i really want to try that pb stuffed date cake! i don’t have any bananas right now, though, so i’m going to try it with applesauce instead! thanks for the recipe :)
