Chicken & Vegetable Frittata {paleo}

I’m not sure if any of you were around when I used to blog 6 days a week; sharing what I ate, how I felt, my workouts, really whatever came to mind.  And I loved it. I really did. It was a wonderful creative and emotional outlet.

Obviously this space has changed but that doesn’t mean that I don’t still love it or still love writing or still love and appreciate you. I do, I do!

It just means that I, and my life, have evolved. I feel very lucky to say that I have a lot of exciting things going on and that doesn’t leave a lot of time to sit in front of my computer, open WordPress and blog.

But. When I do have some time to write and have something delicious, fun or exciting to share… you bet I will.

I have been making this frittata almost every week. Well actually, Mama Honey Bee has been making this frittata every week. She totally perfected this recipe and got me hooked on it too.

It is super easy and totally customizable. Don’t like spinach? Sub broccoli. Not down with red pepper? How about orange, yellow or even tomatoes.

The chicken totally makes this frittata protein packed and satisfying. I like to have it with some avocado (obviously) and some fruit. Perfect breakfast.

Chicken & Vegetable Frittata

Ingredients (Makes 6-8 servings)

  • 2 shredded organic chicken breasts – recipe here
  • 12 free range eggs
  • 1/2 cup onion, chopped*
  • 3 handfuls of spinach, chopped*
  • 1/2 a red pepper, chopped*
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • coconut oil to grease dish

*organic

Instructions

1. Preheat oven to 350F.

2. Grease a 9×13 glass baking dish with coconut oil.

3. Beat eggs and add remaining ingredients and mix thoroughly.

4. Pour into baking dish and bake for 30-35 minutes.

5. Cut, serve (with bacon, avocado, apple, whatever) and enjoy – keeps in fridge for up to one week.

Notes: A food processor is great for chopping the pepper and onion!

  3. I would love some posts about self control when it comes to food, how to figure out your ideal healthy body weight/size, losing weight without counting calories.

    1. Not easy subjects to cover in blog posts as everyone is sooo different but I appreciate the suggestions and love your idea about “how to lose weight without counting calories” :) will hopefully work on that one soon!

  4. I just had the frittata with an apple for breakfast and it was delicious and satisfying. Really nice change to my usual yogurt & banana breakfast combo. I only discovered your blog a few weeks ago and have already started food prepping and using a lot of your recipes. Thanks for all the inspiration!!
