How many times have you heard that “breakfast is the most important meal of the day”? Many, right? Well it certainly has validity: starting your day with a nutrient dense breakfast is super important to regulate your blood glucose levels and maintain satiety – but I’m not going to rant about that today.
My view of breakfast has certainly changed over the years. From Frosted Flakes to bagels and cream cheese to yogurt and granola to protein pancakes to overnight oats and “green smoothies”. None of that really worked for me… and now my breakfasts look more like dinner to most people.
I never thought I’d say that ground beef + kale + salsa + avocado is one of my favorite breakfasts… but it is. #rethinkbreakfast
Crazy as it may sound, it truly works for me and makes me feel great. But I totally get that this bowl of food doesn’t appeal to everyone at 7am – and I still love some pancakes every now and again!
Looking for some real food and nutritious breakfast ideas? I gotchu.
Egg & Banana Pancake – just three ingredients: banana, egg and coconut flour… couldn’t be easier or more delish!
Easy Peasy Grain Free Pancakes – fluffy mcfluff
Brownie Batter Pancakes – Chocolate for breakfast? Yes. And these are even egg free – but sorry, paleo peeps: contains buckwheat flour.
Oats, Oatmeal, etc.
PB & J Baked Oatmeal Cups – like the sandwich, but better.
Overnight Oats in a PB Jar – the classic.
Baked Cranberry Oatmeal – so warm and comforting!
Pumpkin Porridge – no oats in this porridge… the English folk might hate me for that! Protein packed and grain free.
Fruit, Nut & Seed Granola – totally grain free and totally delish!
“Zeggs” – my faveeeee. Sounds so weird but tastes so good.
Shakshuka – OMG yum.
Asparagus, Pepper, Kale Frittata – just a simple frittata, totally customizable with whatever veggies you have on hand.

Breakfast doesn’t have to be complicated. A few hard boiled eggs, an avocado, a banana… boom, you’re done.
