Weekly Meal & Workout Plan: January 19-25, 2014

Why hello there weekly plan. It has been a long while since I have posted one of you.

Lately I have been jotting down my workouts for the week in my agenda and have kept my meals pretty simple. I know life is busy, but meal planning and scheduling your workouts actually makes things easier… I promise :)

After a long day, it’s awesome to open the fridge to pre-cut veggies, ready made grains and snacks. Sure you will spend some time preparing this beforehand, but ultimately it makes for a simpler and healthy week. Here’s what I prepped for the week…

Food Prep Jan 19, 2014

Hard boiled eggs / Quinoa / Zucchini

Chunky monkey fudge / Broccoli / Sweet potato

Nothing too crazy time consuming right? Boil the eggs, cook the quinoa, cut the zucchini, make the chunky monkey fudge (so yummy), cut/steam the broccoli and sweet potato. Easy peasy.

I have been experimenting with my eats as of late — which I will talk more about this week. As for workouts, spinning is still on repeat but I have been back Crossfit-ing and I am going to get in a run today — my knee is basically all better, yay! I also re-joined the basketball league I played in during the fall. We had our first game last week; it’s interesting but fun to play again!

  • Hard boiled eggs or egg scrambles with nuts, veggies and fruit – breakfast
  • Egg & banana pancake – breakfast
  • Banana bread – snacking
  • Fruit/veggies and nuts – snacking
  • Tuna salad with spinach, sweet potato and nuts –  lunch
  • Baked salmon or smoked salmon with spinach, sweet potato, broccoli and nuts – lunch
  • Quinoa fried “rice” – dinner
  • Chunky monkey fudge – dessert



Sunday: Run

Monday: Spinning & Yoga

Tuesday: Crossfit

Wednesday: Basketball game

Thursday: Run or Crossfit

Friday: Crossfit

Saturday: Off

  1. I am sticking with Roasted Veggies and some fish this week. Feeling like my system needs a bit of a break. How about ratatouille? I have seen some good recipes out there for that.

  2. Yay for being back to Crossfit! I keep meaning to check out a box in town sometime…I’m just afraid of really liking it, and therefore having to pay for it :-S
    As for meals, I’ve been craving Mexican lately so I’ve got buffalo chicken enchiladas on the plan this week, plus shrimp stirfry and pancakes.

  3. I want to do spinning and yoga with you someday. That would be a blast, in my opinion. I wish I could tell you I was eating meatless this week but I am not… although I have been eyeing Davida’s basil tofu recipe, so maybe try that! I have it in the back of my head for sometime soon.

  4. Hooray..I’m so happy for you getting back into your Crossfit!! It must feel awesome to have that knee on the mend. That Chunky Monkey Fudge sounds great…especially because there’s too many bananas in my apartment current..As You Know!! :)

    I’ve never gone meatless for very long so I’m excited to see what kind of recipes may come up. Have a beautiful Sunday lady!

  5. So exciting you are back into running and crossfit! I’ve tried a class called kinesis lately! It reminds me a bit of TRX and gravity strength training – kind of a pulley system but also using a bit of your own bodyweight as resistance (and lots of core). It’s been fun!

  6. I did some food prep for the first time last week. I couldn’t agree more that it felt good to open the fridge and see stuff already ready for me. No guessing on what to eat for lunch, having those healthier options and saving a bit of time at dinner. I’m definitely doing more prep!

    I love banana bread! I have a yummy recipe for chia chocolate chip banana bread that I’m hoping to prep for next Sunday with whatever bananas I have left over that don’t get eaten.

  7. I was so excited when I saw that you ran three miles today!! I’m so happy that you’re able to do that again!! I’m making some banana/strawberry muffins this week – I generally don’t like bananas, but for some reason banana bread is so freaking good! Happy Sunday, friend!

  8. Crossfit and Running- a double whammy!! Nice one!

    Are you a fan of curry? You could make a big batch of that and add legumes or even fish for some protein! I have a curried tuna patties recipe on my blog which I think Davida and Megan have both tried which they liked? Have a good Sunday!

  9. I’m totally with you on meal prepping. Even if it’s just one or two things, it still helps makes my week go smoother! Today I prepped some chili and kabocha squash for the week.

    You’ve got such a great variety of workouts in your life lately – I love it! And I’m so glad your knee is better too. :D

  10. You should try sauteing some onion and garlic in olive oil, and then add sliced carrots and zucchini. Cook the carrots and zucchini until barely soft and serve with salt on boiled potatoes. So good. So delicious.
    As for the working out part. I might be dropping by here more often because I need the motivation to start working out!

  11. Yum!!! All your food looks so good. I am a meal prepper too! It makes my weeks SO much easier :) Also…that chunky monkey fudge looks amazing…definitely going to try once I am done with Whole 30.

  12. I heard cross fit was a really good workout and fun! What are your thoughts on it? (If you don’t mind me asking.)

  13. I’m actually doing a sugar detox so I’m eating a lot of meat (protein!) this week. I did sauté a ton of mushrooms, onions and peppers and ate it with pasta sauce and spaghetti squash and chicken sausage for dinner – I would recommend it without the sausage, it was so yummy.

  14. Mmmmm coconut banana pancake… Sorry, I’m focused. I think it’s so fabulous that you are in a basketball league! Although I am definitely not skilled enough for that, I’ve always wanted to get into some kind of co-ed sports league with John as a way to stay active together and meet new people. Maybe once we move :)

  15. It’s amazing how Sunday prep can completely change your eating! It’s easier to eat healthy, there;s no stress at dinner time and you grab your lunch and go in the mornings.
