I am so very glad I was able to connect with Amy a few months ago through the blogging grapevine. I was immediately impressed by Amy’s blog when I stumbled across it, especially when I noticed all the lovely comments she gets, on every post! I think the reason being, is that Amy has such an authentic and lovely voice to her writing that we can all relate too.
Her posts are honest and thoughtful, and I really enjoy reading every single one of them. She clearly has a passion for healthy living and really enjoys sharing it with her readers. My favorite part of being a healthy living blogger is the people I’ve had the chance to meet, and I’m so glad I was able to add Amy to that list. Okay, enough of the mushy stuff. On to these Chocolate Coconut Cream Bites you’re here for!
In the past few months, I’ve mostly unsuccessfully delved into developing my own vegan baking recipes. I’ve had a few successes, which you’ll find on Running on Real Food, but I’ve had a lot of failures. Some of them were edible, just not pretty and some of them went straight into the garbage. What a waste!
Today, I’m moving on baby! It’s back to basics: raw treats and desserts that don’t require any baking. I love them, they’re simple, they’re good for you, they’re easy, so I’m saying so long, oven!
The little treat I came up with for my guest post today tastes pretty much like what you’d imagine when you hear Chocolate Coconut Cream Bites. They’re creamy, rich, decadent, chocolate-packed and coconut-filled bites of delicious. Plus you only need a handful of simple ingredients and I bet you have them all in your cupboard right now.
The wonderful thing about these little treats is you can serve them to your friends and family and they’ll never guess that a. they’re vegan, and b. they’re good for you!
These decadent treats can be enjoyed as dessert or as a snack anytime of day. They would even be great as a pre-workout snack due to the natural sugars from the dates and healthy fats from the coconut oil and almonds.

Chocolate Coconut Cream Bites
- ½ cup raw almonds
- 1 packed cup, pitted dates
- 2 tbsp coconut oil
- ¼ cup + 2 tbsp unsweetened fine coconut
- ¼ cup cocoa
- Optional, but recommended: coconut and cocoa for rolling.
1. Place the almonds in a food processor or high-powered blender and start to break down.
2. Once the large pieces are gone, add in the rest of the ingredients.
3. Remove and place in a bowl.
4. Roll into balls.
5. Optional, but recommended – Roll in coconut, cocoa, or both!
6. Store in an airtight container in the refrigerator.
