Healthy Rice Squares {gluten free}

Hi friends! I’ve been meaning to share this super easy snack with you for awhile. Its been a really busy and tiring week so I’m glad I had this recipe drafted. It’s that pre-holiday time isn’t it? I have not been getting my usual 7-9 hours of sleep each night and I’m feeling it. I’m not a caffeine person but I now better understand why people drink coffee.

Anyways… these squares.

There’s really not a whole lot to say about this recipe…

  • I like Rice Krispie Squares
  • I don’t like the ingredients label
  • I bought a huge bag of brown rice crisps awhile ago
  • I didn’t know what to do with them
  • I threw three ingredients in a bowl and hoped for the best

Done. It seriously does not get easier than this.

Healthy Rice Squares

Ingredients (Makes 8 squares)

  • 1 1/2 cups brown rice puffs
  • 1/4 cup honey
  • 1/4 cup sunflower seed butter — any nut/seed butter would work

Instructions

1. Line a loaf pan with parchment paper and set aside.

2. In a medium bowl combine all ingredients.

3. Once combined, press mixture into the bottom of the loaf pan with a spatula (or your hands).

4. Refrigerate for one hour before cutting into 8 squares.

5. Store in the refrigerator in an airtight container for up to two weeks.

  1. These look delicious! I’m going to have to try them. My week is extra busy and I’m glad, like you, I had some posts/recipes drafted to free up a little time. I’m not getting enough sleep either :( maybe 6 to 6.5 hours and I do usually have one cup of coffee in the morning. I never feel like coffee’s caffeine wakes me up. It’s actually the fruit I eat in the morning giving me energy! (: wishing you a lovely day!

  2. 7-9 hours of sleep? Definitely jealous! I max out at 5-6… Even when I don’t have anywhere to be in the morning, my brain just likes to wake me up and say HEY! Time to get the day started. What can you do… I love a good cup of coffee, but I usually try to limit it to just one cup a day — any more than that and I start getting weird headaches.

  3. I like to get 7-8 hours of sleep, but lately it’s been more like 6 and it’s seriously taking a toll on me. I need sleeeeeep! I like coffee, but I usually only drink 1 cup of decaf per day. I feel like caffeine affects me too much in a bad way.

  4. I need 8 hours of sleep. Can’t really sleep any longer than that, but definitely feel it if I get less! These treats look so good. I’d love one right about now for breakfast. I know, shocking since I’ve been bashing sweet breakfasts. I think it’s because I ate a Rice Krispie Treat for breakfast for like five years of my life, every single day. Get some rest – you’ve gotta enjoy that trip girl!

  5. There they are! I’d spotted these in your Instagram feed and immediately wondered if I’d missed you sharing the recipe. Good to know it wasn’t my brain playing tricks on me :).
    About the sleep … too little. My goal are 7.5 hours per night but I never (!) get these during the week which makes me feel awful – and worn out. Trying again today – wish me luck! Fingers crossed for you, too! Aaaand I owe you a mail – though a letter is in the works already, too.

  6. Amy, I love all of the recipes you post. :) I am definitely trying this one! I usually get between 7-8 hours of sleep per night. I do better with 8, but I feel like I usually get seven, and I can run off of that. Once I get below seven hours though, I feel useless the next day!

  7. Great recipe Amy! I’d say I get about 6-7 hours of sleep per night. Sometimes more sometimes less depending on the night. So far my week is going well; although, I’m anxious to be on vacation next week, so I’m ready for it to be over!

  8. These look so easy and tasty! I have a bag of brown rice puffs that I haven’t touched in a while, so now I know what to do with it ;-)
    I usually get 7-8 hours a night. Any less than 6 and I’m grumpy as all hell, but my body doesn’t let me sleep more than 8. Which is annoying when I want to sleep in!

  9. You had me at 3 ingredients, now I want these! I’m feeling the same way this week about sleep and being stressed. I can’t WAIT to sleep in soon! I am a big coffee drinker (I have my own coffee pot in my office at work) and I usually have 2 cups every morning.

  10. Who doesn’t love Rice Krispies Treats?? What a great, healthy, easy twist!!!
    I usually sleep about 7-8 hours, preferably 8! If I’m up after 11pm it’s a shock!!
    I drink coffee in the morning because I like a nice, hot cup to wake me up….I’m a creature of habit!…but I don’t think the caffeine really has an effect on me one way or the other! I drank decaf all through both of my pregnancies and it was just fine.

    You’re doing well on the sleep- this past week I’ve gotten up at 5 twice…ironically both on my leg days at the gym lol!

    I love how simple this recipe is! It looks delicious.

    Sleep wise I tend to get more on weekends and weekdays I do well when I am getting 7 hours but sometimes average 6 hours.

  13. So funny you mention caffeine this week! I usually drink at least 1-2 cups of coffee a day (at that’s like the bare minimum). I literally cannot function without it. But, I’ve decided I’m going to cut out caffeine for the holidays since I can get a little bit of extra sleep. It took 4 days of a TORTUROUS headache for me to finally feel normal without coffee, but I’m off it! I’m still not feeling as productive/motivated as I do after a good cup of coffee, but hopefully that will catch up with me soon. :)

  14. I love simple recipes like these!!! Fewer the ingredients, the better! :D I try to get at least 8 hours of sleep a night. If I don’t, then I’ll be exhausted all day (and you’ll probably find me taking a nap that afternoon if I have the time.)
