“Zeggs” {paleo} {gluten free} {vegetarian}

You’ve probably heard me mention zeggs on more than a few occasions. Shall I say I have a bit of an addiction love for this strange but good combo? Yes. Yes, I do. I first discovered zeggs on Instagram (love Insta) and now I’m totally hooked.

So what the heck are zeggs… zucchini + eggs (or egg whites) + banana + cinnamon + honey = zeggs.

Do you want to run away? So did my sister until I convinced her to dig in… it passed her taste test! (She’s a fashionista and food connoisseur – yeah I’m pretty lucky to have a cool little sis)

Okay I obviously know this is such a weird combination of food… #strangebutgood (thanks Laura!)… but trust me on this one it’s GREAT. They are warm (perfect for fall), packed with protein, starchy carbs and can be topped with just about anything (berries, fruit, nut butter, nuts, seeds, coconut).

Updated August 4, 2014: Here are two super simple ways to make them – either on the stove or in the microwave… I prefer the stove-top version with two eggs!

Zeggs ingredients

Zeggs (Stove)


  • 1 small zucchini, pureed/grated
  • 1 banana, sliced and slightly mashed
  • 2 eggs, whisked
  • 1 tsp cinnamon
  • 1 tsp honey (optional)
  • coconut oil
  • toppings of your choice


1. Combine zucchini, banana, eggs, cinnamon and honey in a bowl – mix well.

2. Heat coconut oil in a pan over medium heat.

3. Once pan is hot, pour zegg mixture into pan and scramble until eggs are fully cooked through – about 3-4 minutes.

4. Top your zeggs with goodness, allow to cool and dig in.

  • 1 small zucchini, pureed/grated
  • 1 banana, sliced
  • 3/4 cup liquid egg whites
  • 1 tsp cinnamon
  • 1 tsp of honey (optional)
  • toppings of your choice


1. Combine zucchini, banana, egg whites, cinnamon and honey in a large microwave safe bowl.

2. Microwave on high for 2 minutes.

3. Stop, stir and microwave for another 2 minutes (watch to make sure it does not overflow).

4. Top your zeggs with goodness, allow to cool and dig in.

  1. I have been wondering about zeggs. I assumed they contained eggs to some degree, so I can say I probably won’t be trying them (as I am vegan). There are tons of vegan subs for eggs in baking, but the closed sub for a dish like this would likely be silken (soft tofu). It might be interesting to try!

    My bros and I are like triplets. We get along pretty well :)

  2. I know I would love this because I do egg scrambles with pumpkin and other squash all the time. I guess I never thought about zucchini… but I can totally see it working! I’m a big fan of getting veggies in first thing any way that I can.

  3. Confession: zucchini skeeves me out :shock: I’ve just had some baaaad experiences with it in the past, so I think I’ve been scarred for life. But I totally still need to try the egg and banana thing. And I wish I had siblings! But I’m an only kiddo over here.

  4. What a great idea! When I get home from my trip I may have to try those. I was almost scheduled to go to Toronto for a work trip and ended up looking at a whole bunch of stuff online. It looks like such an awesome city, I wish the trip worked out!

  5. Awesome! I saw this on your WIAW and was hoping the ‘Z’ was for zucchini! I guess I’d call them ‘Ceggs’ what with me being in the UK and courgettes being the typical name for the veg here. Anyway, definitely something I’ll be trying, thanks for the recipe!

  6. I totally agree that the blogging community is amazeballs, and obviously if I’m ever in Toronto I will be stalking you (and Davida). :) I have seen these on IG and wasn’t sure what they were so thanks for sharing! Do you think I could use sugar instead of honey/stevia? I can’t have either :(

      1. Sadly no :( I can’t have agave, honey, maple syrup, most concentrated juices, molasses, or basically any natural sweetener (I’m sure I’m forgetting some). I can pretty much only have table sugar. Or glucose, but I don’t think you can really buy that as a sweetener…

  7. I’ve never heard of a zegg before! I’m definitely intrigued….I have a couple of zucchinis so I might just try this tomorrow morning. I dont know how I feel about it but I’ll get back to ya on my review ;) haha!

  8. I will be trying that! I actually make something kinda similar. I use 1/2 c oats, 1 c almond milk, 1/2 to whole purreed zucchini, with cinnamon, and 1/2 c egg whites then top with 2 T P2B. It is delish!

  9. I’ve actually been making something like this for a while. I coined it “PB & Jeggs.” Peanut butter and whatever egg creation – jam, berries, apple, carrot, zucchini. There’s nothing that doesn’t go with eggs! Right?!
