Weekly Meal & Workout Plan: September 8-14

Hi friends! How is your weekend so far? As per usual, I’m just popping in with my food prep and weekly plan today.

My food prep seems to happen on Saturdays… that’s my “I just need to check things off my list” mentality for ya. Making my lunches is my top priority so…

I prepped veggies,

Veggie Prep

Baked spaghetti squash,

Spaghetti squash

And assembled.

Yup, I basically eat the same thing for lunches all week but it keeps things easy.

Weekly plan

  • Oatmeal overload for breakfast: overnight oats, protein oatmeal
  • Spaghetti squash pasta with veggies and chickpeas for lunch — recipe soon!
  • Lemon baked tilapia
with green beans and sweet potato
  • Grilled chicken and veggies… typical…
  • Kabocha squash experimentation!

Sunday: Run: 5km and stretch

Monday: Yoga

Tuesday: Insanity

Wednesday: Run: 8km

Thursday: Yoga

Friday: 3km & Sprint and ab workout

Saturday: OFF

Well, that’s the plan! Hope you have a great Sunday — catch ya tomorrow :)

How was your Saturday?!

  1. Good for you for prepping all that good in advance! I’m sure I’m going to have to get more organized about stuff like that. Right now if I pack my lunch the night before, I’m doing well! I usually take dinner leftovers for lunch, so I try to pack it up as I’m cleaning up after dinner (or while I’m dishing out food if I know there will be plenty left over.). My Saturday was pretty fun (other than the 3 yr old’s drama which is par for the course these days). We went to the Greek festival for lunch, then had a quiet afternoon at home watching football (and I got a workout in!)

  2. I am still trying to figure out a good on the go lunch plan. I need one for Tuesdays and Thursdays. And it has to be something I don’t have to reheat! Meal prepping has already helped me so much this year, however I haven’t really been planning persay. I realized I got too obsessed last year with what I had on my plan (which I started in order to budget groceries), so I need to maybe just plan dinners now.

    1. I totally understand about being obsessed. Just last month I would plan what I was having each night but that was too much. Finding that happy balance is key.

  3. The spaghetti squash with chickpeas looks awesome! I still haven’t picked bought any squash yet this fall. I need to get on that!

For lunches I usually make at least one batch of something (last week it was bean burgers, this week it’s a lentil and rice salad) to take for a few days and then I either make a sandwich or take leftovers on the other days. I like having most of my lunches taken care of for the week so I don’t have to worry too much about making lunch the night before.

  4. Oooo! Kabocha experimentation?! Thanks for reminding me that I need to pick up a squash of my own when I hit up the store today – those suckers are just so good! Lunches are something I need to get better at. Right now I’m just winging it on a daily basis, but I’m thinking that having a huge batch of something would help, because you’re right… having to think about it too much is just no fun at all.

    Happy Sunday!

  5. Planning makes such a difference for me! People think it’s crazy, but IMO, you have to figure out what you are going to eat everyday anyway, so might as well get it done at once and make some better choices :)

  6. Looking forward to seeing what your Kobacha squash experiment is! I love meal planning and look forward to having time to food prep on Sundays. I make much better choices through the week when I do and things flow more smoothly.

  7. I definitely have the “check things off my list” mentality too – it just feels so good to have something crossed off!!! You just reminded me that I need to make overnight oats again. I really want to try out a version with peanut flour!! It’s been on my to-make for a while – another thing I can cross out soon ;)
And 14km?! Woohoo!!! You will kill it!

  8. Such a productive one you are on a Saturday! So the past week or so, I’ve actually been bringing pancakes to work/uni for lunch… I just make a double batch when I eat them for breakfast, and they hold up reallllly well.

A packed week of exercise there too- Love how varied it is- especially the yoga with some cheeky insanity between it! Look forward to your recipe, seeing as the other two of yours have been successes ;)

  9. Oh, I’m excited for the spaghetti squash recipe! It looks delicious. I love when you can meal prep and get enough for a whole week and who cares if you eat the same thing every day, it’s so healthy!
By the way, what kind of yoga do you practice?

  10. It looks like you have a great week of lunches packes! I usually pack lots of little snacks to eat throughout the day as my lunch. When I’m not at work over lunch I usually eat leftovers or fix a quick salad or stir fry. I’m excited to start eating spag squash more this fall. My favorite way to eat it is with turkey marinara sauce and frozen peas.
