Sweet Potato & Spinach Mug Cake [WIAW 7]

Hi everyone! Happy What I Ate Wednesday! Well technically, it’s What I Ate Saturday because I thought Saturday was a particularly fun day of food.

 

What I Ate Wednesday Saturday

Pre-run: I started my morning with 10 Energybits… don’t forget to enter the GIVEAWAY!

Breakfast: After 8 glorious kilometres (aka 4-ish miles), I enjoyed a delicious bowl of peach, cherry, almond protein oatmeal. I got the flavor combination idea from The Oatmeal Artist

but used my protein oatmeal recipe as the base. I needed to refuel after my run and this was just right. Adding diced peaches and cherry slices to the simmering oats = amazing natural sweetness.

Snack: I snacked on some delicious strawberries as I spent time reading outside.

Lunch: I’ve been on a mug cake kick! I definitely find something I like and stick to it for awhile… but with variations so I don’t get too bored. I made this savory mug “cake” for lunch. For all you mamas, this is a sneaky but delicious way to hide veggies for the kiddies. I enjoyed it with some baby carrots and a juicy nectarine (aren’t summer fruits the best?!)

Sweet Potato & Spinach Mug Cake

Ingredients (Makes one serving)

  • 1/2 cup oat flour
  • 1/2 tsp. baking powder
  • 1/4 cup liquid egg whites
  • 1/4 cup mashed sweet potato
  • 1/4 cup wilted spinach
  • salt and pepper, to taste

Directions

  1. Combine all ingredients in a bowl and mix well.
  2. Grease (I used cooking spray) a large mug and pour batter into it.
  3. Microwave for 1 minute and 45 seconds.

Afternoon snack: My lunch filled me right up but I did have an apple to tie me over until dinner.

Dinner: I went out for dinner with Davida and her boyfriend to Utopia. I had the warm grilled chicken salad. It was good but I like a few more veggies in my salad! (The company more than made up for the lack of veggies).

Dessert: After dinner we went to one of my favorite ice-cream places… The Big Chill! Ice-cream was definitely necessary this weekend (considering I went again on Sunday night!) On Saturday, I got my go-to — pralines and cream. It totally hit the spot and the mini Oreo on top is awesome :)

Balance and moderation are my keys to living well — although by no means have I got this totally mastered. I continue to remind myself that because I exercise and eat well the majority of my life that I can enjoy an ice-cream cone (or two!) every once in awhile. Trying to be perfect is just not realistic. It causes stress, anxiety and overall unhappiness.

I think that my Saturday eats embody balance: mostly nutritious (spinach, strawberries, oats, etc) while some (ice-cream!) were not so nutritious — but still totally awesome. That’s how I balanced my Saturday’s food choices and continue to work on balancing my life. How do you balance your food choices?

  1. I’ve tried sweet mug cakes before (without much success), but I’ve never tried a savoury one. Yours looks really good – I love the combo of sweet potato and spinach!

    I’m all about the 80/20 balance too. I’ve been working at a bakery this summer and I’m pretty sure most of my 20% has been coming from cupcakes and cookies haha.

    Bummer about the lack of vegetables in your salad. I’ve had that happen and boy is it disappointing.

  3. Savoury mug cake! Brilliant! Agreed on the lack of veggies for the salad but who cares when you have great company right? Totally think you’ve mastered the 80-20 rule girl! A day with a run, spinach and ice cream is a good one if you ask me ;)

  4. After stressing about it a lot in the past I’ve gotten better at accepting my diet will balance itself out in the long run. Most days I’d say I’m going by the 80-20 ‘rule’, too, but others are way sweeter. If I tried harder I might be able to cut out some of the treats (mostly chocolate) I’m having every day ;).
    The savoury mug cake is such a great and creative idea. Maybe I should get experimenting to create a vegan version …

  5. Such a good idea on the mug cake, I will be pinching this as i ALWAYS struggle with lunch ideas, i usually end up grabbing a protein shake as I have no time & don’t just want to grab crabs but this would be a little bit more of a meal and sneaking some veggies in! THANKS! :D

  6. I honestly haven’t tried a mug cake, but I love sweet potatoes and spinach so I am sure that I would enjoy this meal!! Also the peach, almond, cherry combo….sound awesome!

  7. OMG that ice cream! I tried pralines and cream for the first time a lil while ago (via my bfs bowl ;-)) and it was not too bad. Quite good actually. My favs though are anything with peanut butta and cookie dough…its hard to get me to branch away lol but I wont steer clear of the free test tastings hahah Oh and yeah, that salad, so sad! I would have been super disappointed as I like mine to be filled with all sorts of things! Variety is the spice of life, who wants a bowl of lettuce
