I felt a bit left out so I have decided to join the party! The theme of this month, is sensible snacking.
I had an early morning workout so I packed breakfast in individual containers to assemble and eat at the office.
I had: plain Greek yogurt (drizzled with a bit of honey) topped with crushed almonds, a banana and sliced strawberries. Yum!
My morning snack consisted of two cashew, oat, date bites and an apricot (sorry, not the prettiest pic…)
These bites are super easy to make! In a food processor, blend 1/2 cup cashews, 1/3 cup rolled oats and 6 pitted dates until blended. Form into small bites (or balls…) and refrigerate until you are ready to eat them! I got this idea from Julie over at PB Fingers.
For lunch, I had some sliced cucumbers, half a pita, hummus and a piece of a vegetable frittata.
I always get hungry around 3pm so I had a Simply Bar. I tried a new flavor: apple cinnamon. Delicious!
I had an oat and banana cookie with dark chocolate chips and walnuts. Yum!
