You’ve probably heard me mention zeggs on more than a few occasions (hi new friends if you haven’t!) Shall I say I have a bit of an
addiction love for this strange but good combo? Yes. Yes, I do.
I first discovered zeggs on Instagram (love Insta) and now I’m totally hooked.
So what the heck are zeggs…
Yup those bowls of mush and mess are all zeggs.
WARNING: They do not photograph well. But they are delicious and are of course super good for you!
So let’s get started:
Zucchini + eggs (whites) + banana + cinnamon + stevia (or honey) = zeggs.
Do you want to run away? So did my sister until I convinced her to dig in… it passed her taste test! (She’s a fashionista and food connoisseur – yeah I’m pretty lucky to have a cool little sis)
Okay I obviously know this is such a weird combination of food… #strangebutgood (thanks Laura!)… but trust me on this one it’s GREAT. They are warm (perfect for fall), packed with protein, good carbs and can be topped with just about anything (berries, fruit, nut butter, nuts, seeds, coconut).
AND THEY HAVE A WHOLE FREAKIN ZUCCHINI IN IT AND YOU DON’T EVEN KNOW IT!
- 1 small zucchini, pureed/grated
- 3/4 of a banana, sliced (or the whole banana if you don’t want to save any for the top)
- 3/4 cup liquid egg whites
- 2 tsp cinnamon
- 5 drops of liquid stevia or 1 tsp of honey
- toppings of your choice
So there you have it. That’s how to zegg.
