Hi everyone! It’s the middle of the week so that means… What I Ate Wednesday! These are my eats from Saturday and I warn you in advance that I was seriously craving my fruits and veggies. Not a bad thing right? I am totally embracing summer fruit — can’t believe it’s almost September. Don’t wanna talk about it.
Anyways, here’s what my day looked like:
What I Ate
Pre-run: I had half of a banana and spoonful of peanut butter to get me going.
Breakfast: My two favorite things to have for breakfast are oatmeal [or some variation of oats] and pancakes. After my run [woo 10K!] I dug into a bowl of N’Oatmeal… aka oatmeal minus the oats. [recipe] I wasn’t sure how I was going to feel about this breakfast because it is missing an essential ingredient [duh oats] but it was amazing. In the mix: almond milk, egg whites, flax seeds, mashed banana, cinnamon and vanilla. Topped with sunflower seed butter, raspberries and a peach. Yum!
Morning snack: While I finished my book [The Cuckoo's Calling -- omg so good!] I had a golden delicious apple.
Lunch: Don’t you love when you crave veggies? I threw together whatever I found and voila… lunch. In the mix: spaghetti squash, broccoli, cauliflower, peas, carrots, tomato sauce and a sprinkling of parm cheese. I also had a nectarine and a handful of blueberries.
Snack-time: I always need a little something to tie me over until dinner so yup, you guessed it: more fruit! There’s greek yogurt under there somewhere…

Dessert: I came home from dinner craving some more… fruit. Obvs. So dessert consisted of a loaded fruit plate: apricot, mango, blackberries, peach and raspberries. Inspired by Gina‘s awesome fruit plates.
Did I tell ya, or did I tell ya? I think that’s a lottttt of fruit and veg. I’m not complaining.
