Eat Your Fruits & Veggies [WIAW 9]

Hi everyone! It’s the middle of the week so that means… What I Ate Wednesday! These are my eats from Saturday and I warn you in advance that I was seriously craving my fruits and veggies. Not a bad thing right? I am totally embracing summer fruit — can’t believe it’s almost September. Don’t wanna talk about it.

Anyways, here’s what my day looked like:

 

What I Ate Wednesday Saturday

Pre-run: I had half of a banana and spoonful of peanut butter to get me going.

Breakfast: My two favorite things to have for breakfast are oatmeal [or some variation of oats] and pancakes. After my run [woo 10K!] I dug into a bowl of N’Oatmeal… aka oatmeal minus the oats.

I wasn’t sure how I was going to feel about this breakfast because it is missing an essential ingredient [duh oats] but it was amazing. In the mix: almond milk, egg whites, flax seeds, mashed banana, cinnamon and vanilla. Topped with sunflower seed butter, raspberries and a peach. Yum!

Morning snack: While I finished my book [The Cuckoo’s Calling — omg so good!] I had a golden delicious apple.

Lunch: Don’t you love when you crave veggies? I threw together whatever I found and voila… lunch. In the mix: spaghetti squash, broccoli, cauliflower, peas, carrots, tomato sauce and a sprinkling of parm cheese. I also had a nectarine and a handful of blueberries.

Snack-time: I always need a little something to tie me over until dinner so yup, you guessed it: more fruit! There’s greek yogurt under there somewhere…

Dinner: I went out for dinner with Davida on Saturday night to a delicious Greek restaurant called Karbouzi. We both got their Greek salads with chicken. Fresh and yummy!

Dessert: I came home from dinner craving some more… fruit. Obvs. So dessert consisted of a loaded fruit plate: apricot, mango, blackberries, peach and raspberries. Inspired by Gina‘s awesome fruit plates.

Did I tell ya, or did I tell ya? I think that’s a lottttt of fruit and veg. I’m not complaining.

  1. Oh Heavens!! There’s no doubt that you didn’t get your recommended servings of fruit & vegetables on Saturday. I’m quite surprised you didn’t turn into some type of fruit, Ha Ha!

    p.s. So jealous you two were able to meet up. Next time you do, can you girls pretend I’m there.. maybe even pull a chair? I’ll take whatever you’re having:) Ha Ha!

  2. Checked out the n’oatmeal recipe and it sounds really good! I’m loving all the color going on in your WIAW. I’d say my fav veggies are probably broccoli, spinach, and any kind of squash. Fruit-wise, definitely strawberries and cherries!

  3. I’m loving all the fresh summery fruits in this post! I go a little fruit crazy in the summers too because it all tastes so much better when it’s local! My favourite fruits are bananas, blueberries, apples, and mango. And my favourite veggies are broccoli, winter squash, kale, carrots, tomatoes, and Brussels sprouts!

  4. All of these meals are BEAUTIFUL! I have to say that I love peaches and will be so sad when it’s not summer anymore and I can’t eat them.

    Favorite fruits – PEARS (I used to really love apples, but now raw apples make me nauseous), peaches, plums, nectarines

  5. Talk about eating the rainbow!!! Such lovely, fresh food. I can’t get enough raw fruit and veggies lately. I’m especially going to miss the amazing summer berries! Ahhh I’m just so jealous of all your plates/bowls of FRUIT!! Seriously, I would be completely happy living off fruit alone. So many amazing different flavors! :)

    I loveeeeeeeeee banana “sandwiches” with almond butter. Soooo good! Any kind of raw fruit is my favorite! I’m a fruit foodie

  7. All of it looks so good! I’m going to miss the fresh fruits in the fall! :( It’s one of my favorite things about summer lol!

    Also, your peanut butter banana is genius! I usually dip my banana in it, but then you waste precious peanut butter! I’m so slicing that bad boy open next time.

  8. Hey there, fruit and veggies. Despite already eating more produce than anybody around me – and being looked at for that – there are days that even I’d call fruit-and-veggie-packed. Yours looks like an amazing version of those.
    Some of my favourites are apples [just splurged on some Cripps Pink], blueberries and kabocha [finally in season again!].

  9. Yum, bananas with peanut butter have quickly become one of my favorite snacks. Well, actually anything with peanut butter is a winner. And that Greek salad looks amazing! I love Greek food!

  10. wow, i’m way older than u, not an exerciser, but eat twice as much :) I eat SO much before bed…like a lot. You’re young…don’t screw your metabolism :)
    Ever have rice cakes + avocado + sea salt? So yum.
